Recipes for a Healthy Turkey Curry Dinner

Tonight's main dish is a good one to keep in mind whenever you roast a big turkey and have lots of leftovers. But, you don't need to wait for a holiday -- fresh turkey cutlets work nicely. Turkey curry is flavorful and low in calories, plus turkey is an excellent low-fat source of protein. Sautéed chard and brown rice complete tonight's meal, and I've found an excellent fat-free chocolate dessert.

Each recipe comes from the Food Channel at About.com. Serve the meal family style in large dishes, or fill each plate (the chard should take up about half the plate).

Tonight's Entree - Turkey Curry


Turkey curry is easy to make, and it's low in calories, especially if you use light cream instead of heavy cream. This recipe is perfect for leftover turkey, or turkey tenderloins. This recipe comes from our Southern Food Guide at About.com.

Side Dishes


Turkey curry is best serve on top of rice, and I think brown rice is the healthier choice because it has more fiber and nutrients than white rice.

Sautéed chard is my second side dish. It's low in calories, and rich in vitamins A, C and K. This is my favorite way to serve chard. It's got a little bacon, but you can omit that if you want -- it's still delicious. This particular recipe is geared up to serve two people so if you're serving four, you'll need to double the amount of ingredients.

Complete Your Meal

Add some whole grain rolls and serve the meal with water or your favorite healthy beverage. I chose low-fat low-calorie chocolate brownies for dessert -- each brownie has only 82 calories.

Here's what you'll need to have on hand for tonight's meal, enough to serve four people:

  • green onions
  • brown rice
  • chard
  • garlic
  • shallot
  • bacon
  • chicken broth
  • nutmeg
  • curry powder
  • turmeric
  • cumin
  • cayenne pepper
  • tomato paste
  • golden raisins
  • light cream
  • white wine vinegar
  • honey
  • flour
  • cocoa powder
  • baking powder
  • baking soda
  • cinnamon
  • brown sugar
  • non-fat dry milk powder
  • egg white, slightly beaten
  • unsweetened applesauce
  • vanilla
  • powdered sugar
  • salt and pepper
  • low-fat milk, water, or your favorite beverage, juice, tea or coffee

Preparation Tips

Here's how I'd prepare this meal tonight. The brown rice takes the longest, so start it first. Move on to the brownies (if you want them right after dinner -- otherwise you can make them anytime you'd like). Make the turkey curry and keep it warm while you prepare the chard. I like to leave leafy greens for last, because if they get over-done or sit too long, they start to lose their beautiful color.
