- When you think about Thanksgiving, you probably think turkey and stuffing. If you want to change it up a little, why not go with a Thanksgiving brunch with a more diverse menu? The following are a few Thanksgiving brunch menu ideas.
- Sausage and egg cupcakes are a great menu item for a brunch. The recipe is simple with only a few ingredients--eggs, sausage, onions, cheese and biscuits. Brown the sausage, and when it's cooked mix the rest of the ingredients all together. Use biscuit dough divided in half and place it in the cupcake pan. Add the mixed ingredients, filling each cup ¾ full and topping with shredded cheddar cheese. Bake at 350 degrees for 20 minutes. The cupcake style makes it a fun item for your table.
- Mosaic potatoes are a fresh way to have your potatoes on Thanksgiving. This recipe, from Better Homes and Gardens Annual Recipes 1997, is very simple and tasty. You need only three ingredients: small yellow potatoes, one bunch of fresh parsley or sage and olive oil. Place parchment paper on a cookie sheet. Clean the potatoes, leaving the skin on, and cut in half lengthwise. Cut a thin slice off each cut half, insert a piece of parsley or sage and replace the thin slice. Place the potatoes cut side down, brush with olive oil and bake at 375 degrees for 35 minutes.
- A delicious recipe from the Food Network is pumpkin spiced pancakes. Simply add a few ingredients to buttermilk pancake mix to make a wonderful holiday-inspired meal. Add 1/3 cup canned pumpkin, ½ teaspoon cinnamon and ¼ teaspoon ground ginger to your pancake batter and mix well. These pancakes are light and fluffy and the pumpkin flavor really says Thanksgiving.
