Ingredients
- 1 (1-pound) fully-cooked ring bologna
- 1 (24-ounce) package refrigerated mashed sweet potatoes
- 1 (8-ounce) can crushed pineapple
- 1/4 cup minced red onion
- 1/2 cup dried cranberries
- 1/4 cup honey
- 3 tablespoons apple cider vinegar
- 1 tablespoon cornstarch

Preparation
Preheat oven to 400 degrees F. Place bologna in 13" x 9" glass baking dish. Cut into bologna at 2" intervals, not cutting all the way through.Prepare potatoes as directed on package and set aside.
In small saucepan, combine pineapple with juice and onion. Bring to a simmer over medium heat; simmer for 5 minutes. Stir in cranberries, honey, and apple cider vinegar and simmer for another 5 minutes. Then combine water and cornstarch; stir into pineapple mixture.
Simmer for 1-2 minutes until thickened.
Brush bologna with pineapple mixture. Spoon the pineapple mixture into the cuts in the bologna. Mound potatoes in center of bologna and drizzle with remaining pineapple mixture. Bake for 20-30 minutes or until bologna and mashed potatoes are hot.
