Roquefort and Bacon Steak Topper Recipe



This creamy steak topper contains three layers of flavor. First, the pleasant tangy bite of the Roquefort cheese, next the salty crispiness of the bacon crumbles, and third, a hint of onion from the shallots and chives. All of these flavors marry well the with beefy goodness of a grilled steak.

Ingredients
  • 1 cup/240 mL unsalted butter
  • 4 shallots, diced
  • 3 stripes of cooked bacon, crumbled
  • 1/2 cup/120 mL Roquefort cheese
  • 2 tablespoons/30 mL olive oil
  • 1 tablespoon/15 mL chives, finely chopped
  • 1 tablespoon/15 mL Worcestershire sauce
  • 1/2 teaspoon/2.5 mL freshly ground black pepper,
  • salt, to taste

  • Prep Time: 15 minutes
  • Cook Time: 7 minutes


  • Total Time: 22 minutes
  • Yield: Makes enough for 4 to 6 steaks


Preparation

In medium pan, saute shallots in olive oil, until brown (about 6-7 minutes). Allow to cool slightly, then transfer to a medium bowl. With a fork or potato masher, mash the shallots with the butter, bacon, Roquefort cheese, chives, Worcestershire sauce, and black pepper. Taste and add salt if necessary. Mixture can be covered and placed into refrigerator as is or placed onto a sheet of wax paper or plastic wrap, and rolled into a log.

Once this is complete, place into refrigerator for 2 hours, or until firm.
