9 Tasty Ways to Use Up that Thanksgiving Turkey

When it comes to poultry, we often like the leftovers better than the main meal -- after all, plain chicken or turkey isn't that great. If you are stuck for ideas, here are some great ways to use those leftovers.

Wraps

Low-carb tortillas are great for wrapping up meat and veggies together for a portable lunch. Don't forget to put leftover (sugar-free) cranberry sauce in with the turkey.

Salads

Put meat on top of green salads.

Add some cheese and a few nuts for a fast and deluxe mix. Or, add the meat, along with bits of apple and maybe some nuts, to some low-carb cole slaw.

Soups

Of course, your grandmother's chicken soup just might be the best around, so by all means use an old family recipe. If you're looking for something different, try something like my Rainbow Soup -- it's very nutritious and delicious (I get compliments every time I make it!)

Gravy

Heat up the meat in low-carb gravy. Serve over low-carb biscuits or mashed cauliflower.

Pasta Sauce

Heat the meat in a sugar-free pasta sauce, and serve over a low-carb pasta or substitute.

Chicken ala King

This is the ultimate comfort food. Serve it over low-carb toast or noodles, or cauliflower "rice".

Turkey Tetrazinni

You can make this classic with spaghetti squash or shirataki noodles.

Chicken Divan

This stove-top version makes for a quick meal.

Chicken or Turkey Pot Pie

You can put a low-carb spin on these classics.
It seems as though all of these dishes are comfort food, doesn't it?

No wonder we enjoy the post-holiday eating so much!
