- 1). Lightly grease the bottom of a baking dish with a small amount of olive oil or unsalted butter to just coat the pan.
- 2). Place the fish fillet or steak in the baking dish. Drizzle a small amount of olive oil or melted butter over the top of the salmon and sprinkle with sea salt or kosher salt and freshly ground black pepper to taste.
- 3). Rinse a lemon under cool, clean water and scrub with a light wire brush to remove embedded dirt and debris.
- 4). Slice 3/4 of a lemon in very thin rounds, approximately 1/8-inch thick with a sharp knife. Lay the lemon slices on top of the fish, evenly spaced and covering the entire portion of the meat. Squeeze the remaining lemon juice over the fish and cover the dish with aluminum foil or plastic wrap. Place the salmon in the refrigerator for one hour to marinate.
- 5). Preheat the oven to 400 degrees Fahrenheit.
- 6). Put the fish in the oven after marinating for 15 to 18 minutes, checking the salmon after 12 minutes. Allow the fish to rest for five minutes after removing it from the oven.
- 7). Transfer the salmon to a large serving platter or individual serving plates and garnish with freshly sliced lemon if desired.
