Stuffed Peppers

A camping recipe from David. This recipe is an easy one to prepare ahead of time at home. Just keep it wrapped in your cooler until you're ready to heat it over the grill or by the campfire.

Ingredients
  • 2 cups of cooked rice
  • 1 jar meaty spaghetti sauce
  • 1/3 cup chopped carrots
  • 1/3 cup chopped celery
  • 1/3 cup chopped onion
  • 1/3 cup Parmesan cheese
  • 4 large green bell peppers

  • Prep Time: 60 minutes
  • Cook Time: 30 minutes


  • Total Time: 90 minutes


Preparation

Prepare rice. Cook carrots, celery and onion with the rice. Set rice/vegetables aside to cool. Then add 1/2 to 1 jar of spaghetti sauce. I used Ragu Classis Italian (extra meaty style). Add the Parmesan cheese and blend well. Cut the tops from four peppers, remove any seeds and rind, and then stuff with the rice mixture. Sprinkle a little Parmesan cheese on top. Wrap each pepper in heavy duty foil and bake for 30 minutes at 350 degrees.

After baking, let cool, and then keep refrigerated until ready to heat at the campground. At the campground, place foil packs on the grill or over campfire coals and heat 20 to 30 minutes, turning frequently to avoid burning.
