Stuffed French Toast Strata with Orange Syrup is a delicious, make-ahead dish for Christmas breakfast. On Christmas Eve, toast six slices of cinnamon-raisin bread and place in the bottom of a 13x9x2-inch pan coated with cooking spray. Spread these bottom slices with pineapple cream cheese and orange marmalade. Butter the tops of six more toasted cinnamon-raisin bread slices and place them, butter side up, on top of the bread already in the pan. Beat four eggs, 1 ½ cups of milk and 1 tsp. of vanilla until smooth. Pour this mixture over the layered ingredients. Cover pan with aluminum foil and refrigerate overnight. In the morning, place uncovered pan in 350 degree oven for 35 to 40 minutes until golden brown. For a more savory dish, put together this egg casserole with a twist. Blend together six eggs, 3 tbsp. sour cream and a dash of salt and pepper. Pour in the bottom of a 13x9x2-inch pan and bake at 400 degrees for seven to 10 minutes or until set. Meanwhile, brown 1 lb. of hot breakfast sausage, one chopped medium onion, and ¼ lb. sliced fresh mushrooms. Drain sausage mix on paper towels, place in large bowl and stir in ½ cup of salsa. Spread sausage mix over crust. Spread 8 oz. shredded cheddar, 8 oz. mozzarella and 8 oz. Velveeta on top of casserole. Cover pan and place in refrigerator overnight. On Christmas morning, preheat oven to 300 degrees and bake for 30 minutes. Prepare a special topping for pancakes, waffles or French toast for Christmas morning. Chop one unpeeled Granny Smith apple with peel left on. This should provide 1 ¼ cup of apples. Mix together the chopped apples, 1 cup of cinnamon applesauce, 3 tbsp. sugar and ½ tsp. of ground allspice. Stir frequently over medium heat for eight minutes. Serve warm.
