Ingredients
- 1/2 cup chopped onion
- 3 carrots, thinly sliced
- 2 ribs celery, thinly sliced
- 4 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1 1/2 teaspoons dried basil
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon Tabasco sauce
- 2 cans (16 ounces each) black beans, drained and rinsed
- 1 can (14.5 ounces) crushed tomatoes
- 2 cans chicken broth, or about 3 to 3 1/2 cups
- 1 to 1 1/2 cups hot cooked rice
Preparation
Combine all ingredients except rice in slow cooker. Cover and cook on LOW for 7 to 9 hours. Add cooked rice before serving.
