Caldereta or kaldereta is popular meat stew recipe in Philippines. Traditionally, Filipino use goat meat seasoned with thick tomato paste for Caldereta. Filipino has a lot of variation for cooking Caldereta, Aside from goat meat, beef, chicken, pork, or even fish can always be use alternately. Every Filipino has its own unique way for preparing caldereta, some might prefer the recipe to be spicy or some might prefer to include coconut cream for more unique flavor. Kaldereta is usually prepared as a pulutan (appetizer) or just for viand. Because Caldereta ingredient is so affordable and always available in local market, it becomes a popular food not only for day to day recipe but for special occasion as well. Here how I cook flavorful goat meat recipe locally known as kaldereta.
Ingredient for Cooking.
1 kilogram goat meat
kg goat liver
1 cup of grated cheese
3-3 tbsp minced garlic
1 onion, peeled and sliced
1 can of Vienna sausage, slice
1 cup of unsweetened pineapple juice
2-3 pcs pickle relish, sliced
Reno liver spread
3-4 potato, quartered
1 carrot peeled and cube
cup tomato sauce
2-s Tbsp cooking oil
Ground peppercorn
1 Red bell pepper, slice and remove seed
Vetsin
Salt
Patis (Fish sauce)
How to Cook Goat Kaldereta
Clean goat meat thoroughly, drain water. In a big casserole bring to boil1 liter of water, then include goat meat to boil to remove gamy flavor of the meat, simmer for 5 minute, then remove from casserole to drain, once again wash using running water. In heated grease less pan, add 2-3 tbsp of canola oil, saut garlic, onion, slice goat liver. Add goat meat, pickle relish, patis (Fish sauce) and simmer for 3-5 minute then add 3 cups of water and bring to boil, simmer for 30-45 minute until the meat tenderize. Add potato and carrots, add water if needed, simmer until carrots and potato tenderize. Add grated cheese, tbsp ground peppercorn, bring to boil until sauce, almost completely dry, add Red bell pepper, tomato sauce and pineapple juice and simmer for another minute. Add vetsin, salt to taste, lastly mix Reno liver spread to thickened and for extra flavor. You could also include chili if you prefer your kaldereta recipe to be spicy. Kaldereta is best served with hot steamy rice or as an appetizer when drinking alcoholic beverages, enjoy.
