Caribbean Seafood Paella
Paella is one of those iconic Spanish recipes. It was so beloved by the Spanish colonists in the Caribbean that the dish has become a favorite throughout the islands. Paella originated in the Valencia region of Spain. Today, not only is it consumed all over Spain, it's enjoyed on the Spanish influenced Caribbean islands as well. There are as many recipes for paella as there are cooks. But one ingredient remains true: Saffron. It's the spice that makes the rice a beautiful yellow color and is essential to the dish.
The seafood ingredients in this recipe are mussels, clams, shrimp, and scallops, which are readily available and affordable. But, the combination is up to you. This paella would taste great with lobster, squid, or octopus.
