- 1). Prepare the fire. Set up a rack to set the skillet or Dutch oven on, away from the fire, if possible; otherwise, let the coals ash over and spread them out so that there are more coals on one side of the fire than the other (a hot side and a not-as-hot side).
- 2). Make the dough ahead of time, if possible, or you can make it on site. Bloom the yeast by mixing 2 tablespoons of quick-rising yeast in a bowl or pot with 1 teaspoon of granulated sugar, 1 teaspoon of salt and 1 1/2 cups of warm water. Allow the yeast mixture to bloom for at least 10 minutes until it starts to foam; if it is a cold day, place the bowl close to the fire.
- 3). Add 3 1/2 cups of all-purpose or wheat flour and 1/4 cup of melted butter or vegetable oil to the yeast mixture. Mix well with a fork or your hands until a dough forms.
- 4). Remove the dough and oil the bowl or pot slightly with vegetable oil or melted butter, then put the dough back in. Cover with a moist towel or plastic wrap. Place close to the fire and let it rise for about an hour or so, depending on the ambient temperature.
- 5). Remove the dough from the bowl or pot and work it slightly between your fingers. Find a clean flat surface and flatten the dough out as much as you can into a rectangle. Melt 2 teaspoons of butter (or use vegetable oil) and drizzle it over the dough, spreading it thinly over the surface.
- 6). Mix 2 tablespoons of ground cinnamon and 4 tablespoons of granulated sugar in a small bowl. Sprinkle the cinnamon-sugar mixture over the dough evenly, reserving a small amount for later use.
- 7). Roll the dough up in a cylinder from one narrow end to the other. Cut the dough into several pieces using a knife. Wipe the Dutch oven or cast-iron skillet with oil and place the dough slices inside.
- 8). Cover the Dutch oven with a lid (if using a cast-iron skillet, cover it with a lid if possible; otherwise, you will have to flip the dough halfway through the cooking process). Place the pot on the hot part of the fire.
- 9). Allow to cook for about 20 minutes. Check after five minutes to make sure that the bottom is not burning. Move to the cooler side of the fire if the dough is starting to scorch or is cooking too fast. Flip the dough, if necessary.

Remove the pan from the heat and the dough from the pan. Allow to cool for a few minutes and sprinkle the top with the remaining cinnamon-sugar mixture.
